Pretty petals and flower heads can be added to salads, crystallised or used to beautify cakes and ice cubes. Just make sure they’re clean and pesticide-free then take your pick: roses, violets, lavender, nasturtiums, violas…
And a simple way to make flower-scented sugar is to add their petals or heads to a jar, layering with caster sugar then screwing the lid on tightly. After a week or so in a cool, dark place your sugar will be infused and ready to use. The flavour will deepen with time.
