This simple spaghetti dish is so tasty. We often enjoy it for lunch when the children are at school, there’s not much to it ingredients wise – but don’t be fooled, it’s packed with taste. Eating it takes me right back to our family holiday in Sicily last year when we sat on a terrace overlooking the sea eating it in a restaurant. The menu wasn’t in English and I must admit I had no idea what I had ordered. When the plate was presented to me by the waiter I felt a little disappointed – ‘Is that it?’ I thought. But it was one of the nicest pasta dishes I’ve ever eaten – proof that simple food, cooked well can kick ass just as well as any fancy-pants recipe.
The recipe below serves 2 very hungry people and costs just 40p per person (you can see how I came to that costing at the bottom of the page)
250g Spaghetti Juice of half a lemon (you might like to add some zest too if you like a zing!) 1 red chilli, de-seeded (unless you are hardcore) and finely chopped 2 garlic cloves (or 1 big one), finely chopped or crushed 6 tbsp olive oil Salt
Bring a big saucepan of water to the boil, add a pinch of salt, a tiny drop of olive oil and then add the spaghetti
Heat the 6 tbsp of olive oil in a smaller saucepan over a low heat then add the garlic and chilli – be careful not to over heat as the garlic will brown too much and not taste as nice.
Keep an eye on the chilli & garlic cooking on the low heat, stirring often for a couple of minutes then remove the pan from the heat.
When the spaghetti has finished cooking (check packaging for exact times but usually around 10 minutes), drain.
Pop the spaghetti back in the big pan and add the chill, garlic and the oil it cooked it to the spaghetti and mix well.
Squeeze in the lemon juice and zest if you are adding and serve.
Delicious with a hunk of crusty homemade garlic bread.
